Trapopogon Pratensis: Goat's Beard


This plant only comes into season 5 weeks every spring, roots and buds are edible. Armenian children make bubblegum from the juice.


Its best served boiled for 2-3 minutes, cooled under cold water, drizzled with olive oil lemon juice and sea salt.
